    In a pot, combine diced onions, carrots, celery, and garlic with the miso paste and sauté until the vegetables start to soften. Do not add oil.

    Add in the water and chicken broth, then season with soy sauce, ginger powder, bouillon, and salt. Let this come to a boil on medium/high heat, then cover the pot with a lid and turn the heat to low. Let this simmer for about 40 minutes.

    Once done simmering, strain out all the vegetables using a fine mesh strainer or a straining spoon.

    Add the mushrooms and cook for 5 more minutes. Right before serving, add in the fried onions and scallions.
