- 2 skirt steaks
- Salt
- Onion powder
- Black pepper
- Oil
- Thick onion wedges
- Crushed garlic
Sauce
- Beef broth
- Soy sauce
- Vinegar
- Aji amarillo paste
- Cumin
- White pepper
- Thick tomato wedges
Fries and Garnish
- Potatoes
- Chopped cilantro
Instructions

Slice the skirt steaks and season with salt, onion powder, and black pepper.

Heat oil in a wok and cook the steak until it's about three-fourths of the way cooked through, then remove the steak.

Add thick onion wedges and crushed garlic to the wok and sauté together.

Prepare the sauce by combining beef broth, soy sauce, vinegar, aji amarillo paste, cumin, and white pepper.

Add thick tomato wedges to the sauce, then return the beef to the wok and let it cook all the way through.

Fry potatoes until they are really nice and crispy.
