Lomo Saltado

Lomo Saltado is a classic Peruvian stir-fry that combines tender beef, crispy potatoes, and savory flavors.     Cut your steak into thin strips and season with salt, pepper, and onion powder.

    Heat some olive oil in a wok and cook your meat until it's about three-fourths of the way cooked through. Then remove it.

    Add the onions and crushed garlic to the wok and sauté together.

    For the sauce, combine beef broth, soy sauce, vinegar, aji amarillo paste, cumin, and white pepper.

    Add the sauce and the tomatoes into your onions. Let them cook for about two minutes.

    Add the steak back into the wok and cook it all the way through.

    Fry your potatoes until they're super golden and crispy.

    At the very end, add the fried potatoes to the Lomo once the heat is turned off and right before serving.
