- 1 onion, diced

- 6 eggs
- Chives
- Parsley
- Basil
- Oregano
- Good amount of black pepper
- Garlic powder
Potato Top
- Olive oil
- 2 potatoes, very thinly sliced
- Salt, to taste
- Pepper, to taste

Heat up some olive oil in a skillet. Add in diced onion and salt. Sauté until they've softened and lightly grilled.

In a mixing bowl, add eggs, herbs (chives, parsley, basil, oregano), grilled onion, salt, black pepper, and garlic powder. Whisk until it starts to foam.

Add more olive oil to the skillet. Once hot, add very thinly sliced potatoes. Season with salt and pepper.
