- Chuck roast
- Garlic powder
- Onion powder
- Black pepper
- Smoked paprika
- Paprika
- Ground thyme
- Salt
- Olive oil
- Beef broth
- Halved baby potatoes
- Peeled carrots
- Onion wedges
- Garlic cloves
- Fresh thyme
- Fresh rosemary
- Worcestershire sauce
- Brown sugar
- Bay leaves
Instructions

Generously season the chuck roast with garlic powder, onion powder, black pepper, smoked paprika, paprika, ground thyme, and salt. Rub it in and ensure all sides are seasoned.

Set the Instant Pot to sear and heat up some olive oil. Sear the meat on all sides.

Once seared, add enough beef broth to cover the roast, along with halved baby potatoes, peeled carrots, and onion wedges.

Add garlic cloves, fresh thyme, and fresh rosemary. Mix in Worcestershire sauce and brown sugar.

Season the broth with an extra dash of all the spices used on the meat and add two bay leaves.

Pressure cook for 60 minutes for a 3-pound roast, adding an additional 20 minutes for every extra pound.

Once done, the roast will be so tender it may shred in the pot. Serve with your favorite side and enjoy!
