- Shrimp
Crispy Onions
- Thinly sliced onions
- Olive oil
Rice and Vegetables
- Olive oil
- Carrots
- Shallots
- Jalapeno
- Garlic
- Tomato paste
- Rinsed rice
- Spices (as listed)
- Chicken broth

Instructions

Mix the listed spices with olive oil, then add in the shrimp and set it aside.

Fry up some thinly sliced onions until crispy, then set those aside.

Add more olive oil to the pan with carrots, shallots, jalapeno, and garlic. Once softened, sauté some tomato paste in with the rinsed rice and the listed spices.

Toast the rice mixture together, then add in chicken broth, salt, and half of the fried onions.

Once it simmers, cover and cook through, then top with the shrimp and cover again.

Garnish with toasted almonds, cilantro, and the remaining fried onions.
