Instructions

Prepare the garlic butter by combining unsalted butter, soy sauce, crushed garlic, and rice vinegar.

Heat oil on a griddle or skillet and add diced onions and diced carrots. Sauté until the vegetables start to soften.

Scramble eggs with black pepper and add them to the vegetables.

Add cold leftover rice, soy sauce, sesame oil, and garlic butter to the skillet. Mix well and add sliced scallions, salt, and pepper to taste.
