Ingredients
- Crumbled mozzarella cheese
- Freshly grated cheddar cheese
- Colby jack cheese
- Cooked chicken
- Tortillas
- Olive oil
Instructions

Add crumbled mozzarella, freshly grated cheddar, and colby jack cheese to a bowl. Microwave for about 20 seconds to start melting the cheese.

Top the melted cheese with cooked chicken and cover with another tortilla.

Add some olive oil to a skillet. Optionally, include chicken juices if available.

Add shredded cheese directly to the hot skillet before placing the quesadilla on top.

Once one side of the quesadilla is browned, add more cheese to the skillet, flip the quesadilla, and brown the other side.
