Chili Oil
- 1 cup vegetable oil
- 1 star anise
- 2 cloves
- Minced ginger
- Minced garlic
- Sliced scallions
- Chopped Szechuan peppers
- Red pepper flakes
- Salt
- Sugar
Noodle Dish
- Cooked noodles
- Soy sauce
- Sesame oil
- Rice vinegar
- Pinch of sugar
- Sliced scallions
- Optional toasted sesame seeds
Instructions

In a saucepan, add 1 cup vegetable oil, 1 star anise, and 2 cloves and let it get hot.

In a heatproof bowl, add minced ginger, minced garlic, sliced scallions, chopped Szechuan peppers, red pepper flakes, salt, and sugar.

Once your oil is done heating up, remove the whole spices and add it to the bowl. It should instantly boil up and sizzle.

Let this sit for 30 minutes so the flavors absorb and it deepens in color.

Add a few spoonfuls of the chili oil to a hot pan with soy sauce, sesame oil, rice vinegar, and a pinch of sugar. Mix that around then add in your cooked noodles.

Top with sliced scallions and optional toasted sesame seeds. Enjoy!
